In Latin America, herbal infusions or teas are often made using fresh leaves picked straight from the garden. There is rarely any need to dry them, as they grow all year round - it’s the tropics!

Ingredients

  • 120 ml/4 fl oz/½ cup fresh spearmint leaves
  • 450

Method

  1. Wash the spearmint leaves well, especially if they are store-bought, as they may have chemical residues on them.

  2. Boil the water and pour it into a teapot. Add the mint leaves, reserving a few for decoration, and leave to steep for 2 minutes.
