Brazilians love their salgadinhos (appetizers), which are eaten as snacks throughout the day. Portuguese in origin, these delicious salt cod fritters can be found wherever ice-cold beer is served. You will need to begin this dish a day or two in advance to allow time to soak the fish.
1 Put the salt cod in a large bowl and cover with plenty of cold water. Leave to soak in the refrigerator for 24-36 hours, changing the water at least three times to remove the salt.
