Kibe (or Quibe), pronounced ‘kee-bee’ is the Brazilian version of the Lebanese kibbeh - an oval-shaped croquette made with minced meat and bulgur wheat. The original recipe was brought to Brazil by Lebanese immigrants in the early 1900s, and although it continues to be referred to as ‘Arab Food’, it is now thought of as a national classic, and is sold in restaurants and bars all over the country.
