Cured dried beef, or jerky, is widely consumed throughout Brazil and, at its best, is as prized an ingredient as a good Serrano ham would be in Spain. Escondidinho means ‘well hidden’, alluding to the fact that the delicious filling lies hidden beneath a plain-looking topping. The pie can be served as a main dish, but in many bars it is served as a snack in tiny single portions.
