Oxtail has a wonderful rich flavour and really benefits from lengthy, moist slow cooking. This stew is extremely popular in Brazil, and a yardstick to measure the quality of any restaurant claiming to serve authentic Brazilian food. The sauce gains an almost gelatinous texture from the bones as it cooks, and the fresh peppery taste of watercress perfectly balances the richness of the meat.
