This recipe is from the state of Pernambuco, in the north-east of Brazil, where they have their own weird and wonderful names for different foods. The dry, hot weather makes the region an ideal place to produce beef jerky, and it is often used in local dishes. Locally grown pumpkins add colour and a distinctive sweet taste to the dish; they are the perfect partner for the gamey flavour of beef jerky.
