A carreteiro was a wagon master who transported goods across the vast grasslands of the southern states of Brazil. His need for a hot meal that was easy to prepare and made from long-lasting ingredients created a recipe that would become synonymous with the profession and a symbol of the state of Rio Grande do Sul. The original recipe called for little more than onions, charque (a kind of beef jerky produced in the south of Brazil) and rice, but extra ingredients have been added over time.<
