This is an Afro-Brazilian recipe introduced by the slaves who were transported to Brazil. Many practised the ‘Candomblé’ religion, in which acaçá is more than just food - it is also an offering to the gods. This dish is less of a sauce, and more a coconut-flavoured purée, which complements other Afro-Brazilian dishes.
1 In a large pan, mix together the olive oil, coconut milk and milk. Heat over a high heat, stirring occasionally, until it comes to the boil.
2 Turn down the heat and gradually whisk in the rice flour, sprinkling in a little at a time and stirring constantly for 5-6 minut
