These irresistible little fried potatoes are a popular Brazilian snack as well as a main meal accompaniment. They are available in supermarkets ready-made and foil-packed, but nothing can compare to the fresh hand-made version.

Ingredients

  • 4 large potatoes, such as Maris Piper or King Edward, peeled and cut into very thin sticks
  • vegetable oil, for deep-frying
  • salt

Method

1 Place the cut potato sticks in a large bowl of cold water to remove excess starch.

2 Drain well, then transfer to a large, clean, dry dish towel and pat dry. Work in batches and change the dish towel when damp.
