This simple fresh pepper, tomato and onion salsa is a wonderful accompaniment for any grilled meat. Barbecue aficionados claim that the combination of sharp acidic flavours is a good way to cleanse your palate between different cuts of meat.
1 Chop the peppers, tomatoes and onion into 1cm/½in dice and place in a large bowl.
2 Whisk together the vinegar, oil, parsley, sugar, salt and pepper in a jug (pitcher). Pour over the chopped vegetables and stir well.
