A truly international concoction, this recipe has a French name, a Portuguese sponge and a very Brazilian filling. Rocambole is a rolled cake made with pão de ló, an egg-rich cake mixture made with no butter, which gives it a very light and springy texture. Goiabada - guava preserve - is the most popular filling, with doce de leite (dulce de leche) a close second, but any type of jam can be used.
