This is a classic and has been on and off the Qantas menu for some time. We first started making it at the MCA café in The Rocks in Sydney, back in 1991. It was very popular for lunch, but it does make a good Sunday night dinner when you just feel like something light to go with a good movie. It was originally served on wholemeal (wholewheat) baguettes, but I like it now on a panini, which is an Italian elongated roll, as it is easier to handle. Toasted focaccia is another winner.
