This salad makes a great first course with a number of dishes, creating a delicious mezze table. Think antipasto, only Middle Eastern. It is also, of course, a wonderful accompaniment to many barbecued and roasted foods. Try sitting slices of roast chicken on top of the tabbouleh, or some barbecued lamb chops and a big dollop of garlic yoghurt. This is really a recipe that you can play around with. This version has more parsley than is traditional, but I love the taste of the fresh herb, so
