This is my favourite puréed soup; it always has a good clean taste of zucchini (courgette). Just make sure you wash them very well as sometimes they can be a little mouldy tasting. If they are not plump, shiny and firm, don’t use them. Don’t fall into that old trap of thinking soup is the garbage can of the kitchen. As with everything, fresh is best. This is one of those purées that you can leave
