Name: Chicken, Leek and Pasta Soup
Yield: Serves 4
Ingredients: olive oil; ½ teaspoon grated zest and juice of 1 lemon; 1 fresh bay leaf; 1 litre (35 fl oz/4 cups) chicken stock; 2 garlic cloves, finely chopped; sea salt; 2 leeks, white part only, washed and finely sliced into rounds; 2 flat-leaf (Italian) parsley sprigs, roughly chopped; 100 g (3½ oz/½ cup) orzo or risoni; freshly ground pepper; Parmesan, to serve (optional); 200 g (7 oz) chicken breasts

This soup is really simple and very clean flavoured. The soup is thick with leeks, pasta and chicken breast. It also works well if you want to add barbecued chicken, which will add a little smoky flavour. Equally as good is shredded roast chicken, which makes it a little richer.
