The simplest pasta is made from flour, eggs and salt. All fresh doughs are best hand-made; I find pasta made in a food processor of inferior quality, and no one has yet been able to convince me otherwise. The dough must not be overworked and it is essential that it is rested for at least 30 minutes before continuing with the recipe. Get ready to really fall in love with pasta making.
