Spaghetti with Cherry Tomato Vinaigrette

This is essentially a cherry tomato dressing on pasta and it works really well in summer. Which is exactly when tomatoes are at their peak. You can place the pasta in the bowl and dress with the vinaigrette, but it is much better to finish the sauce and the pasta together in the saucepan, as the sauce will adhere to the pasta and really improve the flavour.
