This is a classic pasta dish that is so easy to cook at home. It is usually made with guanciale, cured pig’s jowl, which is not always easy to get. You can substitute pancetta, which works really well, or you can do as I like to do and make it with smoky bacon. It really comes to life (although it is not exactly authentic). As the dish also relies on the quality of the canned tomatoes used, make sure you get some sun-kissed Italian ones.
