This is my favourite dish in the world. It’s really last supper material for me. I find these creatures to be the best tasting crab in the world; they have a wonderful sweet flavour, are very moist and have a firm texture. I love eating them at Chinese restaurants, either wok-fried with salt and pepper or steamed with black bean and chilli. They are, however, at their best when simply steamed and dressed with a good oil and lemon juice. You can steam the crab in Chinese bamboo steamer baske
