Mud Crab Again

Roasting is also a great way to cook mud crab. Prepare them in the sink as described for steamed mud crab, then toss with extra virgin olive oil and put in a large roasting tin or dish. Put in an oven preheated to 200–220°C (400–425°F/Gas 6–7) and cook for 10 minutes. Dress in the same way as for steamed mud crab, or try tossing in another vinaigrette of your
