Grilled Tuna with Pesto

Tuna is the king of the sea, fabulous whether raw, cured, cooked or preserved. These fish never stop moving and searching for food. Our search for the best-quality tuna at the market is a daily occurrence at Rockpool. We love to serve it raw, as part of our ‘six tastes from the sea’, as well as on a sashimi plate, or cooked rare, studded with garlic and anchovies and served with a roast garlic sauce. It is so versatile, but it is almost at its best when slightly charred from the barbecue an
