Lobster is marvellous on the barbecue. Preheat the barbecue to medium-hot and cook the lobster cut side down for about 4–5 minutes, then turn over and cook for another 4–5 minutes. The flesh should be just pulling away from the shell when cooked.
You can marinate the lobster as in the previous recipe, and it is great with chermoula spread on the cut side and seared on the barbecue. A sq
