The large wild barramundi is one of Australia’s greatest eating fish, as it barbecues, roasts and pan-fries beautifully. Australia now has a thriving barramundi aquaculture industry, and although these large salt-water-raised fish are very good, I prefer the large wild-caught fish for this dish.
