As I have spent many years both eating and cooking Asian-style whole fried fish dishes, I’m very aware of how delicious fish is when it is taken past what we would consider ‘done’ in Western cooking and becomes really crispy. So what I like to do is employ that theory of fish cooking but add a Mediterranean flavour to the sauce or dressing.

Put your oil in a saucepan or frying pan large
