This is a really simple way to enjoy steak. As cooking on a barbecue is a quick and hot experience it is important to get the steaks to room temperature before you start cooking. You will find that the meat cooks a lot more evenly. It is often hard to judge cooking time, as it depends so much on the heat of the barbecue, but as a starting point, steaks of this size on a hot barbecue will take about 5 minutes for rare, another 1½-2 minutes for medium rare, another 1½ minutes again for medium
