Method

Remove the meat from the refrigerator 2 hours before cooking and season with sea salt. Preheat the barbecue to hot. Make sure the grill bars are clean. Brush the entire fillet with extra virgin olive oil and shake off any excess oil. Put on the barbecue and cook for about 2 minutes on its side, then roll the fillet onto the next quarter and cook for a further 2 minutes. Continu
