Butterflying is a really nice way of cooking leg of lamb on the barbecue. If you don’t want to butterfly the meat yourself, ask your butcher to do it for you. It takes a lot of the work out of the dish, but it won’t be as much fun, will it? Another good option is to get your butcher to cut the leg, on the saw, into leg steaks.
