Method

Steam the spinach in a steamer basket set over a saucepan of boiling water for 8 minutes until wilted. Squeeze out any excess water and chop the spinach. Use a stick blender to purée the spinach with the butter, sea salt and some freshly ground pepper for 5 minutes, or until smooth and creamy.
