These beans have a wonderful full flavour and sweet taste when properly cooked. Whatever you do don’t undercook them; they are marvellous with just olive oil, garlic and one hour of long, slow braising. Normal green beans can be cooked in the same way with great success, just reduce the cooking time, but not by too much now. If you’re used to eating undercooked starchy green beans don’t get scared when these emerge a dark green colour. They are not meant to be a vibrant bright green colour;
