This vegetable is another great kitchen all rounder. Eggplant (aubergine) is great for dips, sauces and barbecues. It is also great in vegetarian dishes, holding many of them together, and is really yummy sautéed, as it is here. The brown caramelized exterior and the soft, warm interior makes it irresistible.
