This is a wonderful summer dish, when the corn is so sweet that eating it raw is like crunching little yellow lollies. There are two ways of doing this. At Rockpool, we juice some of the corn kernels, cook the remaining kernels in that juice, then blend half the mixture, resulting in a beautiful creamy corn that has no cream in it.
