  • 2 red capsicums (peppers), each cut into 8 strips
  • 2 green zucchini (courgettes), ends trimmed

Method

Cut the capsicum strips in half widthways. Cut the zucchini in half lengthways, then cut into 3 cm (1¼ inch) long pieces. Cut the pumpkin horizontally into four, then cut into 1 cm (½ inch) thick slices. Lightly blanch the pumpkin in boiling water. Combine the capsicum, zucchini, pumpkin, garlic and onion in a bowl with the extra virgin olive oil, verjuice, rosemary and seasoni
