Cut the capsicum strips in half widthways. Cut the zucchini in half lengthways, then cut into 3 cm (1¼ inch) long pieces. Cut the pumpkin horizontally into four, then cut into 1 cm (½ inch) thick slices. Lightly blanch the pumpkin in boiling water.
