Roast Baby Carrots

True baby carrots are not Immature carrots, as one might expect, but a variety that is small when fully grown. They are sold by the bunch with their little green tops still attached. You can get carrots in the shape of baby carrots but these are trimmed from large carrots. The trick with these little guys is to have a well-caramelized exterior and a soft interior. Make sure you dry the carrots after washing them, as too much moisture will impede the caramelizing effect.
