This is really delicious. Cumin and honey are great together. You can use water instead of chicken stock if you like and cream instead of crème fraîche, if it is proving hard to find. The most important thing to do is make sure the carrots caramelize. This way you will get the best flavour. You can pass the purée through a sieve to achieve an even silkier finish, if you like.
