Tarator is another simple sauce that is easy to make and as versatile as the rest. I use it on the side of barbecued and roasted meats, poultry and fish and it is great on vegetables. I also love it tossed with mussels just after they have been opened, or mixed through pasta. Tarator is a Middle Eastern sauce that is used a lot in Turkey, mostly in conjunction with fish.
