Gremolata is a very simple mix of aromatics that the Italians use to bring braises back to life. When I say that, I mean that it just adds a bit of freshness that may be missing after long cooking. But because garlic with herbs and citrus peel is such a wonderful combination, I like to use it sprinkled on roasts, barbecues and pan-fried foods as well as traditional braises.
