This is a fantastic little dressing that relies on the wonderful taste of mellow sweet garlic. I love it drizzled over roast chook or barbecued tuna steak. It is also delicious on freshly boiled leeks or artichokes. Slowly roast 2 whole garlic bulbs as instructed in the above recipe. When cool enough to handle, cut the garlic through the equator and squeeze out the flesh, discarding the skin. B
