Thoroughly wash the lemons in cold water to remove the waxy coating. Put enough water to cover the lemons in a large saucepan and bring to the boil. Add the lemons and sea salt. Boil the lemons for 30–40 minutes, or until soft, then remove from the water and set aside to cool. They are now ready for use.
