  • 1 whole preserved lemon
  • 1 garlic clove
  • 80 ml (

Method

Quarter the preserved lemon, remove the pith and finely chop the rind. Crush the garlic in a mortar with a pestle. Put the crushed garlic in a bowl and add the extra virgin olive oil, lemon juice, preserved lemon rind, sea salt and freshly ground pepper. Mix well.
