DELLAGRACIA, or Posidonia, as the place is called today, is a village on the island of Syros where the wealthy inhabitants built summer villas at the end of the nineteenth century. This dish takes its name from that civilized resort, where one can still admire beautiful Italianate mansions with lovely gardens next to unsuccessful imitations of central European castles.
