These could be served in conjunction with Moussaka Tartlets at a drinks party or as part of a buffet. Both use filo - well, they would, wouldn’t they? - but have pleasantly contrasting flavours.

A good use for home-salted cod, though this is one occasion when you might like to try using shop-bought salt cod instead. If you do, remember you have about three days of desalination ahead of you before it is edible
