We usually eat cauliflowers, carrots and root ginger cooked, but raw and combined they make a fresh and crunchy salad. Those who hate cauliflower because they were served it overcooked as children may love it like this.
Separate and trim the cauliflower into florets and put into a salad bowl. Trim, peel and cut the carrots and ginger into julienne strips. Deseed the chilli and cut into fine julienne strips. Add these to the bowl.
Put the olive oil in a small saucepan over a low heat. Stir in the cumin and paprika. Add the juice from the lemon and the orange flower water, together
