Throughout the Mediterranean, whole baked fish feature on every seaside restaurant menu. Typically these will be grey mullet, sea bream or sea bass. The following treatment - where the fish is cooked in the oven on a bed of potatoes surrounded with roast tomatoes - can be used for any of them.
