Kataif- deep-fried stuffed yeast pancakes - can be cloyingly sweet and horrifyingly calorific. It is all very well if you are wearing a loose-fitting dish-dash, but for most of us a modified version - that eliminates the second frying and the heavy syrup with which they are traditionally drenched - produces a lighter and more appealing dessert. The filling of whipped orange or lemon cream means this will never be a mean cuisine option, but it is very good and one does not need a large porti
