This is one of the simplest dressings to make, which is probably why it features in countless dishes, including grilled and steamed fish and shellfish, baked tomatoes and pasta. It originated from French settlers from the South of France, but unlike the French version, the Argentinian recipe doesn’t include tomatoes.

Ingredients

  • 4–6 cloves garlic, finely chopped
  • 1 small bunch of flat-leaf parsley, finely chopped

Method

  1. Put the garlic, parsley and white wine vinegar or lemon juice in a bowl and whisk to combine. Add the oil gradually, and keep whisking. Season to taste with salt and black pepper.
