Characterized by colourful, richly-flavoured ingredients, this sauce, which is often used with oven-baked dishes, is typical of the recipes that were brought by the Portuguese who came into Argentina from Brazil.

Ingredients

  • 45 ml/3 tbsp olive oil
  • 2 Spanish (Bermuda) onions, sliced

Method

  1. Heat the oil in a pan and add the onions. Cook over a low heat for 2–3 minutes, stirring occasionally until beginning to soften.

  2. Add the garlic and peppers and cook for a further 3 minutes, stirring frequently.
