Litterally translated niños envuelto means ‘wrapped-up children’. These rolls contain a tasty filling of bacon, cheese and grilled peppers. They are braised in white wine and stock, which can be thickened with a little cornflour to make a sauce.

Ingredients

  • 4 beef escalopes, each weighing about 150 g/5 oz
  • 30 ml

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Place the beef between sheets of clear film (plastic wrap), and gently pound with a meat mallet or rolling pin until very thin.
