The Argentinian equivalent of doughnuts, these are usually eaten as a morning break or mid-afternoon snack, often accompanied by a cup of steaming mate. They can be filled with dulce de leche or apple purée as suggested here, or with créme pâtisserie.

  • 175 g/6 oz/ cups plain (all-purpose) flour

Method

  1. Pour the oil into a heavy pan or deep-fat frying (it should come no more than half-way up the pan) and heat to 180°C/350°F.
  2. While the oil is heating, sift the flour, baking powder and salt into a large bowl. Stir in the caster sugar and lemon rind. Make a hollow in the middle of the dry ingredients.
