Figs grow in abundance in Argentina, but their season is short, so as well as eating them fresh they are dried for enjoying at Christmas, bottled in syrup or made into jams and conserves; a good way to use slightly under-ripe fruit.

Ingredients

  • 500 g/ lb firm ripe figs

Method

  1. Carefully wash the figs and pat dry on kitchen paper. Trim off the top stalk ends with a sharp knife, then either gently pull the figs in half by hand, or cut with the knife.
