I got the most lovely plate of roasted vegetables with this sauce while sitting outdoors in the Gothic Quarter of Barcelona & I fell in love. It’s nutty & tangy & great on pretty much everything. In a food processor or blender, mix 6 oz (170 g) roasted red peppers from a jar (drained), 1 plum tomato (cubed), ¼ c (35 g) roasted almonds, ¼ c (60 ml) olive oil, 2 cloves garlic, juice from ½ lemon, 1 day-old heel or slice of rustic bread (ripped), a pinch of paprika, salt & pepper. I like to pulse while processing to give it a more rustic texture that is not super smooth.
